Domaine Mathias, Pouilly-Fuissé 'En Cenan' 2021

​Domaine Mathias is an exciting seventh-generation Burgundy producer in Pouilly-Fuissé, started by Antoine Charvet in 1894, certified organic and farming biodynamically. Gilles Mathias matches the techniques of their ancestors with modern research to create clean, pure wines with a nod to the fulsome regional Mâconnais style. En Cenan is made using 100% organically grown Chardonnay exudes notes of ripe, sweet citrus fruits, white flowers and a fine minerality on the nose. The palate is fresh yet harmonious, with structure and nuances of yellow stone fruit and the sweet scent of honeysuckle, accompanied by some pear and buttery brioche. A wine that beautifully represents both the grape variety and the terroir and one which pairs wonderfully well with all kinds of poultry.
